Fried Onion Mash

Prep Time: 20 Min | Cook Time: 1 Hour | Servings: 8


Potatoes

INGREDIENTS

  • 6 large russet potatoes, large diced (peeled if desired)

  • 1 large sweet onion chopped

  • 1 cup butter

  • 1.3 cup milk

  • 1.4 sour cream

  • 3 TBS Garlic (any form, as much as you want really)

  • Chanda’s Blend to taste

  • Pepper to taste

DIRECTIONS

  1. In a large pot of heavily salted boiling water add diced potatoes and keep on high heat. While potatoes cook, melt 3 tablespoons of butter in a hot skillet. Add in onions and fry until halfway done. Add in garlic and continue to fry until golden brown and caramelized. Do not drain butter that the onions were cooked in.

  2. The potatoes should be ready to mash at this point. Drain all water from pot and return to stove. Over the heat add in 1.5 cups butter and lightly mash until melted. Once combined, add sour cream and milk. Mash until your preference of lumps - Don't over mix as potatoes become pasty if you do (simple rule of thumb with any mashed potato recipe). Lastly, fold in the onions and 1-3 tablespoons of onion butter.

  3. Depending on the consistency you like, may want to add more milk. Season to taste with Chanda’s Blend & pepper.
